Technical data sheet
- Method description
Viscosity is the resistance to the flow of liquid materials. Viscosity is measured by rotating a spindle attached to the viscometer in the liquid sample. The torque against the rotating spindle is converted to viscosity units.
- Acceptable matrices
Applicable to liquid samples only. Powdered flours, hydrocolloids, proteins, can be tested if the directions on the procedure to disperse the sample into a liquid are provided with the submission.
- Unacceptable matrices
Solids and extremely high viscosity liquids cannot be tested by this method.

Common Viscosity by Brookfield Viscometer Test Testing Questions
Viscosity is the resistance to the flow of liquid materials. Texture and perceived quality of food is dramatically impacted by changes in viscosity.
Viscosity is crucial in quality control and process design, affecting operations such as stirring and homogenization, pumping, and packaging. It can be used as an indicator of quality by the consumer.
Viscosity changes the flow properties of a liquid food and influences the appearance of consistency of a product. This is why this measuring variable is important in most production stages.
Honey, jams, corn syrup, peanut butter
The higher the viscosity of a liquid, the thicker it is, and the greater the resistance to flow. If viscosity is too high in a material, it could lead to issues with production efficiency and cost-effectiveness. High viscosity can affect the rate at which a product travels through a pipe or how long it takes to set or dry.
We make every effort to keep our methods and detection limits up to date according to the latest standards and qualifications. If you have any questions regarding the limit of detection/quantification or method references, please contact our Customer Service team at 1-800-245-5615.
Our standard turnaround time is 10 business days for most assays. There are some assays that require a longer turnaround time. We also offer a RUSH service that is half the time of the standard turnaround time of the assay at double the cost of the assay. A few assays that we provide cannot be rushed due to the nature of the test. Please check the specific assay you are interested in regarding the ability to RUSH the turnaround time.
